BBQ Grilled Salmon with Herb Sauce

There is nothing like a great piece of fresh salmon prepared with my artSAVORs and BBQ grilled until perfectly tender and flaky. This salmon is delicious hot from the grill, served at room temperature or even cold. When cooked correctly, salmon just melts in your mouth. I decided to get creative with my marinade by using a combination of artSAVOR 70, artSAVOR 75, chopped fresh cilantro and parsley. The dried Persian lime, “limu omani” in artSAVOR 70 and the combination of the dried and fresh herbs creates a smoky magical umami to the already umami-rich salmon. While perfect just as is, my herby green sauce made with artSAVOR 75 creates a fresh and citrusy savory essence that is the ideal compliment. You can serve this salmon with any side as entrée. On Father’s Day this year, it played a starring role along side grilled ribeye on my buffet menu.

MENU | Simple Summer Dinner

Serves 8

RECIPE INGREDIENTS

Salmon
2½lb          Salmon Fillets
¼C            artSAVOR 70, already mixed with olive oil (see directions below)
2T              artSAVOR 75, already mixed with olive oil (see directions below)
3T              Olive Oil
1T              Cilantro, finely chopped
1T             Parsley, finely chopped
1T              Lemon Juice, freshly squeezed
2T             Vegetable Oil for brushing the grill                   
Salt and Pepper to taste

Herb Sauce
¼T            Parsley, chopped
1T             Basil, chopped
2t             Oregano, chopped
2T             Shallots, finely chopped
2T             Olive Oil
¼C            Champagne Vinegar
2T             Lemon Juice, freshly squeezed 
¼C            artSAVOR 75, already mixed with olive oil (see directions below)

DIRECTIONS

Step 1  |  Prepare Salmon
In a mixing bowl, stir to combine both artSAVORs, olive oil, cilantro, parsley and lemon juice
Season with salt and pepper to taste
Divide wet rub mixture over salmon filets
Gently spread the mixture into the salmon
Set aside for at least 30 minutes

Step 2  |  Herb Sauce
Combine all ingredients in a bowl
Check and adjust seasoning with salt and pepper

Step 3  |  Grill Salmon
Heat grill to high
Brush grill with some vegetable oil to prevent sticking
Place each salmon filet directly on grill
Cook for 1 minute without moving the salmon or so until grill marks are formed
Flip all filets, reduce heat and close the lid for another few minutes

Remove from grill and arrange on a serving platter
Drizzle with herb sauce
Serve immediately

For even flavor in every bite, combine one entire package of each artSAVOR with ¼C Olive oil
Store unused mixture preferably in an airtight glass container in the refrigerator for future use
artSAVOR blends mixed in oil will keep refrigerated for up to 90 days
