Scallop Lettuce Wraps with Yogurt Sauce

INGREDIENTS
Scallops
3T artSavor 60, already mixed with olive oil¹
20 Scallops
2T Olive Oil 5
Wraps & Garnish
5 Baby Romaine Lettuce, Enough to make 20 Wraps
10 Cherry Tomatoes, Halved Roasted
1 Mint bunch, Small Leaves Separated or Julienned
½C Slivered Pistachios, Optional
Yogurt Sauce
½C Strained Yogurt
1T artSavor 75, already mixed with olive oil¹
1 Persian Cucumber, Grated
2T Lemon Juice, Freshly Squeezed
DIRECTIONS
Scallops
In a mixing bowl, toss scallops artSAVOR 60 to coat, evenly
Cover and refrigerate for 1 hour to marinate
Bring scallops to room temperature before cooking
Heat large pan or wok over high heat
Swirl oil and sauté scallops for 1-2 minutes per side, do not crowd them
Yogurt Sauce
Combine yogurt, cucumber, lemon juice
Season to taste with salt and pepper
Can be made ahead
PLATING
Take each lettuce leaf and shape them into a small cup
Arrange one scallop in each lettuce cup
Add a dollop of the yogurt sauce and one half tomato
Garnish with mint and pistachios
Serve immediately
NOTES
¹Mix one entire pack of artSavor with ¾ cup olive oil in a mixing bowl,
transfer to a lidded container or jar with screw top and keep excess in refrigerator for later use.
