Grilled Skirt Steak with
Gorgonzola & Heirloom Tomatoes

RECIPE INGREDIENTS
1pk artSAVOR 10
¾C Olive oil, More if needed
2lb Skirt Steak¹ - Trimmed of membrane and extra fat
½C Gorgonzola Cheese, More if desired
4 Large Heirloom Multi Color Tomatoes, Sliced & Roasted
2t Oregano
1t Thyme
3T Olive Oil, for Cooking

Cast Iron Grill Pan
PREP
Mix the entire package of artSAVOR 10 with oil in a mixing bowl, set aside
Prick meat all over sing a fork
Pour some of the artSAVOR mixture over steaks
Rub the artSAVOR mixture into meat well with your hands on both sides
Add more of the Blend mixture if needed for stronger flavor, optional
Cover steaks with plastic wrap and refrigerate preferably a few hours until ready to cook
Mix oregano and thyme, set aside
Store unused artSAVOR mixture, preferably in an airtight glass container in the refrigerator for future use.
COOK
Preheat Oven to 400˚F
Bring steaks to room temperature
Heat oil in grill pan over medium high heat
Place steak pieces onto the grill pan, do not over crowed
Sear for 4 minutes or until lightly charred², turn over and sear briefly, about 2 minutes²
Remove steaks from heat, let it rest for 1 minutes
Top steaks with cheese and tomatoes and oregano mixture
Transfer steaks into oven and cook for 2 minutes²
Remove steaks from oven 5˚F below your desired internal temperature³
Transfer steaks onto your cutting board, let them rest for few minutes
Cut and serve with your choice of side
NOTES
¹Skirt Steak comes in large piece (s) with different thickness.
Cut it in manageable pieces based on the thickness for more even cooking
²Cooking time depends on thickness of steaks
³135F=Medium Rare 145F= Medium 150F=Medium Well
