Lentil Bacon Soup

Serves 4 – 6
RECIPE INGREDIENTS
Soup
1C Onion, chopped
3T Olive Oil
½t artSAVOR 21
2t Curry Powder
¼t Cumin
2C Lentil Cooked, can - drained & rinsed
3C Chicken Broth
1C Bacon, crisped, chopped
D Pepper, freshly ground
D Sea Salt to taste
Topping & Garnish
½C Bacon, crisped, chopped
½C Fennel Fronds
2T Olive Oil
½C Edible Flowers, optional
½C Micro Greens, optional
1C Strained Yogurt, optional
KITCHEN ESSENTIALS
Hand Inversion Blender
COOK
Step 1
Heat oil in a medium size pot
Add onion, sauté for 3 minutes
Add artSAVOR 21, curry and cumin
Sauté a few more minutes until golden and aromatic
Add lentils, salt and pepper
Add chicken broth and simmer for 20 minutes
Step 2
Add bacon and stir to mix
Remove from heat, allow to stand for 5 minutes
Blend mixture in the pot with a hand blender
Do not over blend
Check seasoning and adjust to your liking
SERVE / PLATING
Pour soup into soup dishes dividing it into 4 to 6 portions
Top it with some chopped bacon
Drizzle oil
Top with some fronds
Top with yogurt, greens and flowers, optional
Serve immediately
