Grilled Romain with Chopped Fennel & Celery Root

INGREDIENTS
Vinaigrette
¼T artSAVOR 75, Already mixed with olive oil (See Directions Below)
½C Vinaigrette Salad Dressing, Store Bought
1T Lemon Zest
2T Lemon Juice, Freshly squeezed
Salad
8 Baby Romaine Lettuce, Halved
2 Fennel Bulbs, Sliced Thin
1C Celery Root, Julienned
3C Persian Cucumber, Diced
3C Cherry Tomatoes, Halved
3C Micro Greens
DIRECTIONS
Whisk artSAVOR 75 mixture, vinaigrette, lemon zest, lemon juice
Mix well and set aside for the flavors to infuse
Preheat grill to medium high
Place fennel, celery root, cucumber and tomatoes in a mixing bowl
Add ¾ of the dressing and toss to combine
Grill romaine on the cut side for 20 seconds, do not over grill
Arrange lettuce grilled side up on serving platter
Drizzle remainder of the dressing on lettuce
Top with fennel, celery, cucumber, tomato mixture
Top with micro greens and serve
