Herbed 4-Cheese Pizza with Summer Garden Vegetables

My idea of a perfect pizza is a crispy, but chewy toothsome crust covered in fresh, bright crunchy toppings. Honestly, I can’t create a summer menu without a pizza course! But that is really almost true year-round. I challenge myself to keep it new and different, despite that I have made countless pizzas in every variation you can imagine from different crusts to unusual toppings. Lately I have been using artSAVOR blends to create more subtle and unexpected flavors. As pleasant evenings abound during the summer in Southern California, I am using the outdoor grill as often as possible. This incredibly simple and rustic pizza benefits from the summer herb garden plus artSAVOR 30 to elevate four kinds of cheese melted into deliciousness on the artisan crust topped with crunchy summer vegetables. This is all the best of summer brought together in a pizza!
MENU | Summer Simple Do Ahead
Starter, Appetizer, Pizza
Serves 8
INGREDIENTS
artSAVOR Mixture
¼C artSAVOR 30, mixed with olive oil (see directions below)
2T Parsley, chopped
2T Cilantro, chopped
1T Tarragon, Chopped
1T Basil, Chopped
Pizza Dough
1 Pizza Dough, store bought (I love Whole Foods fresh pizza dough)
1T Olive Oil
3T Flour, for dusting, more if needed
3T Cornmeal, for dusting, more if needed
Cheese Blend
¼C Ricotta Cheese
1C Mozzarella Cheese, Shredded
½C Cambozola Cheese, torn into small pieces
Sea Salt and Pepper to taste
5 Mozzarella Cheese, small fresh balls, in plain liquid
Toppings
2 White Asparagus, blanched, sliced in half
¼C Green Beans, blanched
½C Multi-Color Cherry Tomatoes
1 Zucchini, ribbon spiralized or thinly sliced
Garnish
¼C Basil, chiffonade
KITCHEN ESSENTIALS
Rectangular Cast Iron Pizza Pan
Pizza Peel or AirBake Cookie Sheet
DIRECTIONS
STEP 1 | Pizza Dough
Lightly coat a bowl with olive oil
Place pizza dough in bowl and drizzle oil over dough
Cover with kitchen wrap
Set aside to rise at room temperature, about 4-5 hours
STEP 2 | artSAVOR 30 Mixture
Combine artSAVOR 30 and freshly chopped herbs together
Set aside 2T to drizzle over pizza crust before baking
Divide the remaining mixture in half in two separate bowls
STEP 3 | 4-Cheese Mixture
Stir to combine ricotta, shredded mozzarella and Cambozola
Fold in salt, pepper and one bowl of the reserved artSAVOR 30 mixture
Set aside
Step 4 | Vegetable Topping
In a bowl toss to coat the asparagus, green beans and tomatoes with some
of the artSAVOR 30 from the other reserved bowl
In a separate bowl, gently toss to coat the zucchini ribbons
with the remainder of artSAVOR 30
STEP 5 | Preheat Grill & Pizza Pan
Preheat grill to medium high heat on one side with the other on medium low
Place pizza pan on the hotter side of the grill
I like to use a cast iron pizza pan to more easily handle and maneuver the pizza
STEP 6 | Prepare crust
Lightly dust work surface with flour
Remove risen dough from bowl by turning it out onto lightly floured work surface
Form dough into a ball
Divide in two portions, using one portion for this recipe
Reserve other half for another pizza with the same or other toppings
Gently stretch the dough to your desired shape, using only your fingers
I prefer more a rectangular shape about 12” x 9”
It does not need to be perfect, being slightly irregular adds to its artisan appeal
Transfer stretched dough onto pizza peel lightly dusted with flour and cornmeal
Brush with dough olive oil
Evenly drizzle the 2T of reserved artSAVOR 30 mixture across the dough
Season lightly with salt and pepper
STEP 7 | Grilling Pizza
Move pizza grill pan to the low heat section of grill
Slide dough onto pizza pan and close the lid
Grill for about 1-2 minutes or until getting grill marks without burning the crust
Remove from grill with pizza peel and have toppings ready
Spread cheese mixture onto the crust and spread evenly
Arrange asparagus, green beans, and tomatoes across pizza
Arrange mozzarella balls across pizza using your artistic skills
Slide pizza back onto grill pan on the low heat side of grill
Grill until crust is golden and cheese is melted
Remove pizza from grill with pizza peel
STEP 7 | Plating
Arrange basil chiffonade across pizza
Arrange zucchini ribbons evenly across pizza
Drizzle with the remainder of artSAVOR 30 Mixture, if any
Cut and serve

For even flavor in every bite, combine one entire package of artSAVOR 30
with ¾C olive oil in a clean dry bowl.
Store unused mixture preferably in a clean, dry airtight glass container
in the refrigerator for future use.
artSAVOR blends combined in oil will keep refrigerated up to 90 days.
Use only clean utensils to measure out preserved artSAVOR in oil mixtures.
Be careful not to contaminate reserved artSAVOR in oil mixtures.
