Homeira's Herby Lemony Chicken

INGREDIENTS
Chicken
8 Boneless Skinless Chicken Thighs
¼C artSAVOR 50, already mixed with olive oil according to directions below, more if desire
¼C Parsley, Chopped, more if desired
3T Oregano, chopped
6T Butter, Soften
2 Lemons, sliced, charred, see directions below
1C Cherry Tomatoes, Quickly Sautéed, see directions below
½C Cambozola Cheese, broken into chunk with a fork, more if desired
Herb Sauce
3T artSAVOR 75, already mixed with olive oil according to direction below
¼C Fresh Parsley
½C Fresh Cilantro, chopped
6T Fresh Basil, chopped
3T Fresh Oregano
2T Shallots, finely chopped
¼C Champagne Vinegar
2t Red Chili Pepper Flake
D Sea Salt and Pepper, to your taste

DIRECTIONS
Step 1
Place chicken on baking tray, rub with artSAVOR 50, refrigerate for few hours
Mix butter, parsley, oregano, salt and pepper in a mixing bowl, set aside
Step2
Make the Herb Sauce
Add artSAVOR 75, parsley, cilantro, basil, oregano, shallots, vinegar, chili pepper, salt and pepper, set aside
Step 3
Pre-heat oven to 400˚F
Bring chicken to room temperature
Rub chicken with butter-parsely mixture to evenly coat
Roast in oven for 30 minutes
Remove chicken from oven, add charred lemons, sautéed tomatoes and cheese, return to oven
Roast for another 5 minutes or until done.
Finish chicken by garnishing it with the herb sauce
Serve immediately
Quick Cherry Tomato Sauté
Heat olive oil in wok over high heat.
Add cherry tomatoes with dash of salt and pepper
Quickly sauté for one minute or so
Do not over cook as they will become too soft
Charred Lemon
Drizzle lemon slices with a glug of olive oil
Season lightly with salt and pepper
Char on grill grid over open flame on gas range burner, with a kitchen torch or under broiler

For even flavor in every bite, combine one entire package of artSAVOR 50 with ¾C olive oil
and artSAVOR 75 with ¼C Olive oil.
Store unused mixture preferably in an airtight glass container in the refrigerator for future use.
