Homeira's Herby Lemony Chicken

OMG! is all I can say describing my first, second and every bite of this creation. My palate was all singing, all dancing through every morsel of this herby, tangy and nutty ensemble. Typically, as you may know, I am not a fan of most poultry because of the strong gamey aftertaste. I developed artSAVOR 50 to overcome this less than desirable quality and allow palate to enjoy on the array of divine flavors. In this creation, I also used artSAVOR 75 with additional fresh herbs and lemon, which elevates melange of flavors to the ninth plane of heaven. I’m not kidding! The beauty of this dish is you can serve it right from the pan sheet.

artSAVOR 75 Ingredients

Dill, Parsley, Leek, Basil, Salt, Pepper, Herbs & Spices

MENU | Simple Summer Dinner
Main, Entree, Buffet, Chicken, Poultry

Serves 8 – 10

INGREDIENTS

Chicken
8     Boneless Skinless Chicken Thighs
¼C   artSAVOR 50, already mixed with olive oil according to directions below, more if desire
¼C       Parsley, Chopped, more if desired
3T        Oregano, chopped
6T        Butter, Soften
2          Lemons, sliced, charred, see directions below
1C        Cherry Tomatoes, Quickly Sautéed, see directions below
½C       Cambozola Cheese, broken into chunk with a fork, more if desired

Herb Sauce
3T        artSAVOR 75, already mixed with olive oil according to direction below
¼C      Fresh Parsley
½C      Fresh Cilantro, chopped
6T        Fresh Basil, chopped
3T        Fresh Oregano
2T        Shallots, finely chopped
¼C      Champagne Vinegar
2t         Red Chili Pepper Flake
D         Sea Salt and Pepper, to your taste

DIRECTIONS

Step 1
Place chicken on baking tray, rub with artSAVOR 50, refrigerate for few hours  
Mix butter,  parsley, oregano, salt and pepper in a mixing bowl, set aside

Step2
Make the Herb Sauce
Add artSAVOR 75, parsley, cilantro, basil, oregano, shallots, vinegar, chili pepper, salt and pepper, set aside

Step 3
Pre-heat oven to 400˚F
Bring chicken to room temperature
Rub chicken with butter-parsely mixture to evenly coat
Roast in oven for 30 minutes
Remove chicken  from oven, add charred lemons, sautéed tomatoes and cheese, return to oven
Roast for another 5 minutes or until done.
Finish chicken by garnishing it with the herb sauce
Serve immediately


Quick Cherry Tomato Sauté

Heat olive oil in wok over high heat. 
Add cherry tomatoes with dash of salt and pepper
Quickly sauté for one minute or so
Do not over cook as they will become too soft

Charred Lemon

Drizzle lemon slices with a glug of olive oil
Season lightly with salt and pepper
Char on grill grid over open flame on gas range burner, with a kitchen torch or under broiler

artSAVOR MIXTURE

For even flavor in every bite, combine one entire package of artSAVOR 50 with ¾C olive oil
and artSAVOR 75 with ¼C Olive oil.
Store unused mixture preferably in an airtight glass container in the refrigerator for future use.
artSAVOR blends mixed in oil will keep refrigerated for up to 90 days.
