Shaved Brussels Sprouts & Sour Cherry Salad

INGREDIENTS
½lb Brussels Sprouts, thinly shaved - using food processor or mandoline
¼C Lemon Juice, freshly squeezed, more if needed
½C Sour Cherries, more to your liking
2T Olive Oil
¼C Water
1T Sugar
2T Champagne Vinegar
3 Mint leaves
¼C Golden Raisin
½C Dried Mangos, julienned
¼C Dried Orange Rinds, julienned
½C Almonds, Sliced
3T artSAVOR 75, mixed with olive oil (see directions below)
1T Fresh Parsley, chopped
3T Mint, julienned
3T Champagne Vinegar
Salt and Pepper to your taste

Food Processor or Mandoline
Saute Pan
DIRECTIONS
Step 1
Place shaved brussels sprouts in a large mixing bowl
Drizzle with lemon juice, toss and set aside
Step 2
Heat oil and water in pan over medium high and sauté cherries for about 1 minute or so
Add sugar and stir
Add vinegar and mint leaves
Simmer for few minutes or so until cherries are plump
Step 3
Combine artSAVOR 75, Parsley, mint, vinegar, salt and pepper in a mixing bowl
Set aside
Step4
Combine raisins, mango, orange rinds, and cherries to brussels sprouts
Gently toss to mix
Stir in artSAVOR 75 mixture to lightly coat
Stir in cherries and almonds
Adjust seasoning with salt and pepper as desired
Transfer to serving platter for service
