Pickled Persian Cucumber & Onion

Dill, Parsley, Leek, Basil, Salt, Pepper, Herbs & Spices

INGREDIENTS
1T artSAVOR 75, Already mixed with olive oil
1C Persian Cucumber, Julienned
1C Onion, Cut into Rings
3T Shallots, Cut into Rings
1C Heirloom Cherry Tomatoes, Halved
3T Capers, Coarsely Chopped
¼C Fresh Dill, Tips Only
¼C Champagne Vinegar
1T Lemon Zest
2T Lemon Juice, Freshly squeezed
2T Olive Oil
D Sea Salt and Pepper, Freshly Ground

Mixing Bowl
DIRECTIONS
In mixing bowl, add cucumber, onion, shallot, tomatoes, caper, and dill, toss to mix
In a separate small mixing bowl, add artSAVOR 75, vinegar, lemon zest and juice, mix well
Add oil, salt and pepper to the vinegar mixture, whisk well
Pour vinegar mixture over cucumber mixture and toss to mix, serve immediately or refrigerate to serve later
