Black Forbidden Rice Salad
artSAVOR 75 Ingredients
Dill, Parsley, Leek, Basil, Salt, Pepper, Herbs & Spices
Serves 4 - 6
INGREDIENTS
Dressing
¼C artSAVOR 75, Already mixed with olive oil
½C Vinaigrette Dressing, Store Bought
1T Lemon Zest
2T Lemon Juice, Freshly squeezed
Salad
2C Black Forbidden Rice, Washed
2T Shallots, Chopped Finely
1T Olive Oil
1C Chicken Broth, More if Needed
D Sea Salt and Pepper, Freshly Ground
2C Yellow and Red Beets, Roasted, Sliced
½C Green Grapes, Halved
1C Orange, Sectioned
1C Slivered Pistachios
1C Micro Greens,For Garnish
DIRECTIONS
In a mixing bowl, add artSAVOR 75 mixture, Vinaigrette, lemon zest, lemon juice
Mix well with a fork or wire mixer, set aside for the flavors to infuse
Heat oil in pan over medium high heat
Sauté shallots until translucence, 30 -40 seconds
Add rice and sauté for 1-2 minutes, season with salt and pepper
Add chicken broth, cover, lower heat and cook until rice done but still crunchy
Add more chicken broth if needed
Set aside to cook
Add half of the dressing on rice to mix
Add remaining of the dressing to beets, grapes and orange sections, toss to combine
Plate the rice and arrange other ingredients on top
Top with pistachios and micro green and serve
