Spinach, Walnut & Sweet Potato Pizza

A dream pizza for vegetarians, this recipe offers complete nutrition and a delicious array of flavors in every bite. From sweet potato, earthy spinach, nutty walnuts and pungent salty goat cheese – all brought together by my versatile artSavor 75.

Dill, Parsley, Leek, Basil, Salt, Pepper, Herbs & Spices

Serves 1 – 4

INGREDIENTS

1 Pizza Dough, Store Bought
2T Olive Oil
1T artSAVOR 75, Already mixed with olive oil
1 Sweet Potato, Sliced, Roasted
1T Olive Oil
¼C Onion, Chopped
2C Spinach, Julienned
D Sea Salt and Pepper, Freshly Ground
2T artSAVOR 75, Already mixed with olive oil
1C Monterey Jack Cheese, Shredded
1C Grueyer Cheese, Shredded
¼C Goat Cheese, More if needed
¼C Sun Dried Tomatoes, Chopped
¼C Walnuts, Caramelized
2T Olive Oil, For drizzling, Optional
2T Mint Chiffonade
2T Basil, Chiffonade

KITCHEN ESSENTIALS

Medium Size Pan
Pizza Peel
Rolling Pin

DIRECTIONS

Heat Oven to 450˚F
Put dough in a bowl, add oil, cover and let rise for 2-3 hours in warm temperature
Transfer dough onto lightly floured working surface, divide it into 2 equal pieces for thinner crust
Roll out and stretch dough to your desired thinness and shape
Drizzle with oil, sprinkle artSAVOR 75, salt and pepper
Bake for 7-9 minutes or until golden.
Take out and set aside

Heat oil in pan over medium high
Add onion, sauté until translucent
Add spinach, sauté until tender, add salt and pepper and remove from heat
Spread cheeses over pizza crust
Spread spinach mixture over crust
Arrange potato slices
Place goat cheese in between potato slices
Arrange sun dried tomato
Return to oven and bake for about 4-5 minutes, or until cheeses melt
Spread walnuts
Drizzle with oil, optional
Garnish with mint and basil chiffonadé and anything else you think may taste and look good on your pizza such as edible flowers
