Summer Zucchini Corn Bisque

Once my life was lived in the fast lane of corporate America. Believe me, I know what it's like to come home and just want something delicious and soul-satisfying with minimal effort. Here I offer you a recipe with just a few ingredients, packed with flavor that takes minutes to make. If you just happened to have some fully-cooked Argentinian Red Shrimp on hand, this light and healthy soup becomes a complete meal. Oh! Wait! You really need a glass of Margerum Riviera Rosé to complete your dining experience.

Dill, Parsley, Leek, Basil, Salt, Pepper, Herbs & Spices

Serves 6 – 8

INGREDIENTS

2T artSAVOR 75, Already mixed with olive oil
½C Onion, Finely Chopped
2T Olive Oil
2t Curry powder
1C Chicken Broth, More if needed
5 Zucchini, Cut in Pieces
2C Corn, fresh cut from Cob or Canned
D Sea Salt and pepper, Freshly Ground
¼C Pomegranate seeds, For Garnish (Optional)
Fresh Mint, For Garnish (Optional)

KITCHEN ESSENTIALS

Medium Sized Pot
Immersion Hand Blender

DIRECTIONS

Heat oil in pot, add onion and sauté until translucent
Add curry powder, sauté for 1 minute
Stir in artSAVOR 75 mixture
Add Zucchini and sauté for 2 minutes
Add broth and cook for 2-3 minutes
Add Corn and cook for 1-2 minutes
Using a hand blender, coarsely blend the zucchini mixture in the pot, do not over blend
Garnish with pomegranate and mint and serve
