Gluten Free "Black Bean" Pasta Salad

INGREDIENTS
Vinaigrette
¼C artSAVOR 75, Already mixed with olive oil
½C Vinaigrette Readymade
1T Lemon Zest
2T Lemon Juice, Freshly squeezed
Salad
1lb Black Bean Pasta, Gluten Free
3T artSAVOR 80, Already mixed with olive oil
3C Frisee Lettuce
3C Persian Cucumber, Diced
3C Cherry Tomatoes, Halved
1C Mint Leaves, Julienned
1C Goat Cheese, Crumbled
1C Edible Flowers, For Garnish (Optional)

Wok
DIRECTIONS
Vinaigrette
Whisk together artSAVOR 75 mixture, readymade Vinaigrette, lemon zest, lemon juice
Set aside to allow flavors to bloom
Pasta
Bring 4 quarts salted water to boil
Add pasta and cook uncovered for 4-5 minutes, taste to make sure it is al dente, drain over colander
Heat wok over medium high heat
To hot wok add artSAVOR 80 and sauté for 30 seconds
Add drained pasta and toss to coat
Cook for an additional 1 – 2 minutes
Remove from heat and allow pasta to cool to room temperature
Salad
In a large bowl combine cooled pasta, lettuce, cucumbers, tomatoes and mint with enough vinaigrette to generously coat
Divide onto individual plates
Garnish with cheese and edible flowers
