Herby Frittata Wraps

This Middle Eastern Frittata/Omelet is herby and not eggy. Easy to make and delicious to eat. artSAVOR 20 and artSAVOR 75 make this simple elegant appetizer hard to resist. You can use any kind of greens you have available. Presenting them as mini wraps with some crunchy greens and roots will give you the perfect balance of texture. The best part is that these can be prepared in advance and served cold or at room temperature.

Black Pepper, Curry, Turmeric, Parsley, Sea Salt, Baking Soda, Herbs & Spices

Dill, Parsley, Leek, Basil, Salt, Pepper, Herbs & Spices

Serves 8 – 16

INGREDIENTS

Frittata
3T Olive Oil, preferably Ghee
¼C Onion, Finely Chopped
½C Scallions, Finely Chopped
1T Shallots, Finely Chopped
1pk artSAVOR 20
¼C artSAVOR 75, Already mixed with olive oil
4 Eggs, Whole
2 Eggs, White Only
2t Lemon Zest
2T Lemon Juice , Freshly squeezed
2C Spinach , Finely Chopped
1C Lettuce, Finely Chopped
2C Cilantro, Finely Chopped
1C Parsley, Finely Chopped
½C Dill, Finely Chopped
½C Sliced Almonds, Toasted
2T Olive Oil, preferably Ghee

Wraps
½C Strained Yogurt
2T artSAVOR 75 Already mixed with olive oil
1 Thin Lavash, Cut in 4½" - 5" inch squares
3 Persian Cucumbers, Julienned
3 Carrots, Peeled, Julienned
2C Cherry Tomatoes, Roasted

KITCHEN ESSENTIALS

11” Non-Stick Pan

DIRECTIONS

FRITATTA
Preheat oven to 350˚F
Heat oil in pan over medium heat
Sauté onion, until translucent
Add scallion and shallots, cook for 1 minutes, or until aromatic, remove from heat
Whisk together eggs, artSAVOR 20, artSAVOR 75,
lemon zest and juice
Fold in onion, spinach, lettuce, cilantro, parsley,
dill and almonds
Heat oil or ghee in pan over medium heat
Pour egg mixture to pan and shake gently to distribute evenly
Cover and cook until bottom releases from pan, 6-8 minutes
Transfer to oven and cook for 40-45 minutes or until done.
Remove from oven and allow to cool before cutting in pieces

WRAPS
Mix yogurt and artSAVOR 75 in a mixing bowl, set aside
Place a few amount of cucumber and carrot on each Lavash
Layer a piece of Frittata next
Spoon a dollop of the artSAVOR yogurt mixture
Garnish with a roasted cherry tomato
Wrap the Lavash around the filling and serve
